Two weeks ago my cousin and I toured a maple sugar camp several miles south of Grand Isle, this camp has been operating since 1950.

many acres of sugar maples are tapped.

and plumbed into a network of plastic lines that carry the sap

down into a small building
|
where an evaporator will boil away the excess water to make maple syrup
|
the proprietor (red shirt) is explaining a hydrometer to my cousin, one of the tools used to help know when the sap has boiled long enough

trees that are too far or close are tapped the old fashion way using pails
|
|
rolling the hot syrup that has cooled and gelled on the snow is a treat not soon forgotten...
